Einkorn (also called einkorn wheat, einkorn, with the Latin name Triticum monococcum) is one of the earliest cultivated wheat, it is seen as the ancestor of emmer wheat, spelt and common wheat. Einkorn is a diploid wheat species of hulled wheat, with tough glumes that tightly enclose the grains. The domestic form is known as petit épeautre in French, einkorn in German, einkorn or littlespelt in English, piccolo farro in Italian and espelta petita in Catalan.

The earliest clear evidence of einkorn dates from 8650 B.C. from two archaeological sites in southern Turkey. Remnants of this ancient wheat have been found with the iceman mummy Ötzi. It became widely distributed throughout the Near East, Transcaucasia, the Mediterranean region, southwestern Europe, and the Balkans, and was one of the first cereals cultivated for food.

More nutritious

Of einkorn one can use the grain like rice, it’s very tasty both hot as a side dish or cold in a salad. But the whole wheat flour made from it is very suitable for bread and biscuits in many variations as well. Although for many years people were not interested in this ancient wheat because of the low profitability, recently there is more and more interest and it is making a comeback in modern times. It’s rich in magnesium, calcium, and phosphorus and contains all eight essential amino acids (valine, threonine, tryptophan, lysine, leucine, phenylalanine, methionine, and isoleucine) and it is one of the few types of cereals that contains these 8 amino acids. Einkorn’s natural genetic code and low gluten levels make it a superior choice because of the compatibility with the human body when compared to the modern hybrid wheat of today. This world’s oldest wheat is easier to digest, so nutrients are better absorbed. For people with a gluten sensitivity it may prove to be an excellent alternative to modern wheat.
